Homemade PotPie

11-13-12

sliced potatoes, carrots and jalipino pepper in a bit of olive oil



then add one can of chicken broth.  simmer until reduced and the veggies are cooked
then add some diced chicken or turkey.  put in a cup of heavy cream (forgot that picture)

then put the yumminess into a pie pan and cover with a sheet of defrosted puff pastry.  bake in oven at 350 for about 20 minutes

Stuffed Chicken

Chicken Breast stuffed with mozzarella cheese, slice of ham and feta cheese.


then topped with an apple cider/mushroom sause

served with homemade fettuccine Alfredo

Crock Pot Pork Ribs

dry rub on the ribs, I cook 6 hours.  First 3 on high, with the veggies and some apple cider (instead of water, gave it a whole new taste layer).  last 3 turned down to low and put the BBQ sauce on. 







Meatballs and Gnochi

Fry up meatballs
once those are done, put in some cream of mushroom soup, salt, pepper.  as that thickens put the gnochi in.  Just as those are done put in the cooked meatballs (everyone in the pool!)

Apple Pork

found this from Michael Symon on the Chew.  total porky goodness.  2 skillet job.  first one fry up the floured pork tenderloin, the second one fry up apples and ham.  just as the pork tenderloin is done unglaze the skillet with some apple cider.  made some mashed spuds to go with this.  very easy to do, just make sure you have all the prep work done before cooking/

Grape Feta Chicken

smash chicken to be thin.  saute in skillet until golden brown.  then put in 400 oven for 30 minutes.  While chicken is baking make sause with heavy cream and white white.  as that is reducing cut up some grapes and onions.  halfway through the chicken done time put the grapes and onions into the oven for the last 15 minutes.  once chicken is done plate up.  pour cream/white wine sauce oven and then the grapes, sprinkle with Feta cheese!


Cheesy Chicken risoto

leftovers reused!  leftover rice, warmed up with one can of chicken broth, some spices.  as the rice soaks up, put in some diced up chicken breasts, then cheese it all up!

Sausage peppers

Sausage cut up in bite sized pieces, in the skillet with some green peppers


and serve that over some rice.  easy peasy!

Salmon and noodle

Comfort Casserol

one pound of cooked hamburger
1/2 bag of frozen hashbrowns (thawed)
1 bag mixed veggies
1 can of cram of chicken soup
2 cups shredded cheese

as the burger cooks mix the thawed hashbrowns, veggies, cream of chicken soup and 1 cup of cheese in a bowl.  When the burger is done throw it in the pool.  Spray a 9x13 pan, spread yummy goodness.  Top with the rest of cheese,  cook at 400 for 30 minutes or until hashbrowns are done

Pork with Curried orange sauce and rice pilaf

Pork tenderloin cut up in medallions.  seasoned with a mixture of curry powder, paprika and salt.

I like to season one side put in a skillet warmed with olive oil (seasoned side down) then as one side is cooking season the

just as the pork is done pour over a mixture of Balsamic vinegar, orange marmalade, horseradish and more of the original spice mixture.





as the pork cooks I did a rice pilaf.  Warm up some olive oil, add diced up garlic, add cooked rice and one can of chicken broth.  cook and stir so rice doesnt stick to the bottom of the pan until the broth is absorbed
 then add some mushrooms and season (I used Penzey's Sunset Paris)

BBQ cups

Crescent rolls in a muffin tin, filled with hamburger cooked with BBQ sauce and then some shredded cheese sprinkled on top.  Total Kid Comfort food.

and because it was me being a kid night to drink was chocolate milk



Geek Darth Cake

nothing really cooking but it is still a really cool cake pan I found.  May the force be with you!

Breakfast Burrito

makes a great brunch (especially on Labor day)

shredded cheese, sausage, scrambled eggs.  Top it off with some hot sauce and enjoy with chocolate milk...YUM!!

Corned Beef and Cabbage

I make this in the crock pot.  I let the corned beef and potatoes go all day and in the last two hours I put the cabbage in.  For something really yummy use a bottle of Guinness as you start.  The beer also makes a great drink with dinner :)







Chicken in a red wine sauce

Breaded chicken breasts done in a red wine mushroom reduction sauce.



and what is the red wine you ask??  This is really cool because the bottle label is also in Braille.

Pork Chops
